I usually just google what I want to cook, find the five star recipe and make it. Today, I couldn't figure out what I wanted so I made up my own enchilada casserole! Gotta say it was pretty good :)
Add a little garlic, add a little cumin- pile on a bunch of good stuff and it was good to go!
